My Completely Vegan Ice Cream Recipe (and instructions)
This avocado based ice cream turned out more to be like a soft serve ice cream, which is not necessarily a bad thing 🙂 Just keep it in the freezer longer if you can to harden more.
What’s great about this recipe is that it is totally nutritious “ice cream” that is easy, cheap and quick.
You can give it to your kids and not feel guilty at all.
In fact, you can feel great about it as it’s more fruit in their diet, but even a yummier version than just plain avocados.
No one will ever guess it is completely vegan.
Ingredients:
- 2 avocados (about 1 cup)
- 1/4 cup coconut milk
- 1 tbsp sunflower lecithin (this really helps with texture, could use guar gum or xanthan gum about 1/2 tsp or so)
- splash of vanilla extract
- 1/2 – 3/4 tsp stevia powder
- 25 leaves of fresh mint
- 1 tsp spirulina
- 1/4 tsp peppermint extract
- 2-3 Twin Cakes Bakery Peppermint Brownie Bites
Place all ingredients into a blender and blend till nice and smooth. You don’t need a special blender for this as nothing is frozen yet.
Nor do you need a fancy and expensive ice cream maker. So any old blender will do that can mix the ingredients creamy.
Place in a bowl and set in freezer for a few hours to set. You can place these right in the bowls you want to serve them in, little cups, or whatever you want as they freeze.
Sprinkle whatever yummy stuff you have around. I like a little coconut and granola with this as it adds a nice cinnamonly flavor to it.
A bowl of perfection I must admit. Tastes awesome and it’s good for you, what could be better?
This avocado ice cream was not too sweet and had a great creamy texture. We love peppermint so feel free to alter the amount of flavor till you liking. And we loved the addition of the peppermint brownie bites!!! YUM
